CHARDONNAY 2009 FLORESTAN. VARIETAL: Chardonnay 100%. ALC: 12.7%. COLOUR: bright, pale straw, medium to high viscosity. NOSE: Very specific and intense aromas with lots of complex, upfront fruit, with an elegant and concentrated core of pear, melon and citrus flavours that are deep and full-bodied. Spicy, lingering note of gunpowder, tar and toasted vanilla makes you remember this wine. MOUTH: Not as high in extract as in flavor, this is an elegant, fresh, bold, deliciously complex wine that finishes with a note of honey, carried a long way through by well integrated acidity. SERVICE AND FOOD PAIRING: Ideal companion of fine white or max. grey fleshed fish, lobster, tiger prawns, chicken breast and milk fed veal. Cheeses: semisoft. You may decant right before drinking. Serve at 12°C.
ROSÉ 2008 EN BLANC ET NOIR. VARIETAL: Marselan 72%, Merlot 28%. ALC: 14.8%. COLOUR: bright pink, high viscosity. NOSE: Lush, meaty aroma and multilayer of flavours: crushed elderberry, dark cherry and black tea, fresh tobacco and dried flowers. Nice play with French oak. MOUTH: An almost decadent palate. Thick texture, full to medium-bodied, with superfine tannins and long, caressing finish. SERVICE AND FOOD PAIRING: Ideal companion of seafood or fish à la Mediteraneen, pasta with tomato based sauces, very good with veal à la Milanese, rabbit à la Provencale. Cheeses: semisoft to hard. Serve at 14°C.
SYRAH 2008 LE STREGHE. VARIETAL: Syrah 100%. ALC: 14%. COLOUR: shiny, non filtered, dark ruby. NOSE: Deep, dense mix of blackberry, olive, black pepper, mineral, licorice flavors and its benchmark - loads of char-grilled red meat notes as you sniff through. MOUTH: Not for gentle palates, with peppery tannins, rich mouthful and strong acidity supplies endless finish. SERVICE AND FOOD PAIRING: You may decant 2 hours before drinking, (or open a day in advance with the cork on, or the same morning and then remove the cork until the evening) and serve at 15°C. Coq au vin, Choucroute, Beef Wellington, duck stuffed with foie gras, wild boar with porcini, shitake, morel mushrooms, and truffles. Cheeses: hard, matured, blue.
REVIEW by Sommelier Lubomir Stoyanov (January 2011)
CHARDONNAY 2009 FLORESTAN. Bright medium yellow, touch of lemon, yellow flowers and yellow fruits on the nose, fine expression of Chardonnay, quite fleshy on the palate, good stone fruit firmness and nice minerality on the finish, good length and balance, good wine. 16.5.
ROSÉ 2009 TUILERIES. Bright slightly violet pink, very fresh light summer fruits nose, fresh, clear and quite dry on the palate, Cinsault style, doesn’t show its 14.4 acl at all, dry finish, more of a food wine, fruity and firm, well-made and even some complexity. 16.
SYRAH 2008 LE STREGHE. Black purple red, colour sticks to the sides of the glass, black fruits nose, quite firm and less obvious Syrah spice than expected, yet some of this on the palate, good chalky tannins, still a bit of green on the finish, a robust yet smooth vineyard wine whose fruit will deepen as the vines age. 16.
I tasted them before lunch yesterday and some of the family had a glass of the white and rose for lunch and some of the red for dinner. All three improved after opening and with food, the Syrah especially. I can’t say that there is a “sense of place” about them, because I don’t know the place, but certainly that is a “family” style across three very different flavours: one of fruit, depth and elegance.
If I had these wines under my own name, I would be proud of them.

CHARDONNAY 2009 FLORESTAN. Alc: 12.7% Varietal: Chardonnay. Transparent, lightly golden colour. Atractive nose with accent of buttery toast, smoke, pineapple, and English bonbons. Juicy and harmonious, round body with a long finish with butter and caramel. (www.divino.bg / July 2010)
ROSÉ 2009 TUILERIES. Alc: 14.4% Varietals: Marselan and Merlot. Lively and sparkling salmon like colour. Atractive nose of vanilla cream, butter, smoke, and strawberries. Round, well integrated taste, with a structured and flamboyant body, long finish with memories of coffee with milk. Impressive Rosé, a blend of the famous varietal Merlot and the not so famous Marselan. (www.divino.bg / August 2010)
SYRAH 2008 LE STREGHE Alc: 14% Varietal: Syrah. Great ink like colour, with a wonderful texture with fine grainy and silky tannins. Butter, blackberries and spices. This Syrah won me over and proves that the words "finesse" and "Bulgarian wine" can stay toghether in the same sentence. 90-93 points. (www.divino.bg / March 2010)
